1 lime
2 tangerines
6 boneless, skinless chicken breast halves
fresh ground black pepper
1/3 cup chicken broth
1/4 cup sliced green onions
1 tsp. shipped fresh rosemary or 1/4 tsp. dried rosemary (or use crushed basil)
1 Tbsp. water
1/2 tsp. cornstarch
3 cups hot cooked rice or couscous
Finely shred 1 teaspoon of peel from the lime and then from the tangerines, and set aside. Halve the lime and squeeze 1 Tbsp. juice and set aside. Peel and section the tangerines over a bowl to catch juices; set aside. Lightly coat a large skillet with nonstick cooking spray. Season chicken with pepper. Cook chicken in skillet over medium heat for 5 minutes or until browned, turning once. Add broth, green onions, rosemary or basil, reserved peels, and lime juice. Bring to boiling then reduce heat. Simmer, covered, about 8 minutes or until chicken is tender and no longer pink. Remove chicken from skillet; keep warm. for sauce, combine water and cornstarch. Add to juices in skillet; cook and stir until bubbly. Cook and stir for 2 minutes longer. Add tangerine sections and any juice; heat through. Pour sauce over chicken. Serve with rice or couscous. Makes 6 servings.

World Recipe: Maple Barbecued Chicken
3 tablespoons pure maple syrup
3 tablespoons chili sauce -- bottled
1 tablespoon cider vinegar
2 tsp. Dijon Mustard
4 boneless chicken breast halves
Stir maple syrup, chili sauce, vinegar and mustard in small saucepan until well blended. Brush chicken with oil, season with salt and pepper. Arrange chicken on barbecue. Grill until cooked through, turning occasionally and brushing generously with sauce, about 10 minutes. Serve Immediately. Serves: 4

World Recipe: Amazing Chicken Salad Meal
2T Heinz Original Barbecue sauce (35 calories in 2 tablespoons)
2T Hellmann’s Low Fat Mayonnaise Dressing (16 Cal per tablespoon *see note).
4 ounces cooked skinless breast of chicken
1 quart bag of mixed salad greens
Mix two tablespoons of Heinz Original Barbecue Sauce with 2 Tablespoons of Hellmann’s Low Fat Mayonnaise Dressing. Mix in enough water so that it has the consistency of salad dressing. Dice four ounces of cooked skinless chicken breast and mix that into the dressing mix. Spoon chicken/dressing mix over a whole bag of salad, or, if you make your own salad use lots

Recipe: Mexican Pasta Salad
8 ounces dried fusilli or rotellle pasta
6 green onions, ends trimmed and sliced thin
3 Roma tomatoes, chopped
2 fresh jalapeno peppers, seeded and minced
1 red bell pepper, cut into thin slivers
1 cup minced fresh cilantro
1 can (8 1/2 oz.) reduced-sodium kidney beans, rinsed and drained
1/4 cup red wine vinegar
1 Tbsp. salad oil
2 Tbsp. grated parmesan cheese
Salt to taste
Cook pasta according to package directions until just tender to bite. Drain, then rinse with cold water until cool; drain well. In a large bowl, combine the pasta, onions, tomatoes, jalapenos, bell pepper, cilantro, and beans. Add the vinegar, oil, and cheese; mix well, and salt to taste. Serves 6

Recipe: Spicy Chicken Salad Dressing
1 1/4 cups nonfat sour cream
3/4 cup picante sauce
1/2 tsp. chili powder
Salad:
2 cups cooked diced chicken, canned or leftover
1 cup tomatoes
3/4 cup green onion
2 cups frozen corn kernels
1/2 cup canned black beans
3/4 cup reduced fat cheddar cheese
6 cups lettuce
Combine dressing ingredients in a small bowl. Toss with next 5 ingredients and serve over lettuce. Sprinkle with cheese and serve.

Slimming World Recipe: Slow Cooked Garlic Chicken
4 skinned chicken breast halves
1 teaspoon salt
2 teaspoons paprika
2 teaspoons lemon pepper
1 large onion, sliced
10 cloves garlic (about 1 medium), un-peeled
Mix together salt, pepper and paprika. Rub all over meat side of chicken breast. Place onion in slow cooker. Place chicken breast side up on onion. Place garlic on chicken. Cover and cook on low in slow cooker for about 6 hours or until juices run clear.
Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add onion, bell pepper, and garlic; saute 5 minutes. Add seasoning; saute 1minute. Add beans, tomatoes, and kielbasa; bring to a boil. Reduce heat; simmer 10 minutes or until thick. Combine bean mixture and pasta in a large bowl. Top with cheese. Serves 8
